Exaggerated demand for GF foods?

A slew of articles have appeared recently claiming that the need for GF foods is highly exaggerated, citing the fact that very few people suffer from celiac disease.  But this is a non-sequitur.  While it is true that a relatively small percentage of people have celiac disease and generally only those with celiac disease suffer dire consequences from eating gluten, a larger and growing number of people have discovered that they are sensitive to gluten.  Gluten sensitivity can manifest in many different ways, including allergies, bloating, and psoriasis, to name a few.  So just because someone doesn't suffer catastrophic consequences from eating gluten doesn't mean that they don't suffer any consequences and those people deserve GF alternatives, too!

Hi Bruce :) I really appreciate the effort you put into formulating your breads. They are all delicious and I feel good about eating them because they're also the other GF... guilt free!!! I discovered I was gluten sensitive when I went on a cleanse and had to cut out gluten, among other things. My allergies cleared up. When I added the gluten back in, the allergies came back. I repeated that experiment several times with the same results. It's great to have such delicious GF breads as an option :) Keep up the good work!

I've tasted your breads and they are amazing. It's hard to believe they are GF. I don't have any sensitivities to foods with gluten, but with Bruce's Breads, I see no reason to eat other breads. They're not only delicious, they're healthful!
