A slew of articles have appeared recently claiming that the need for GF foods is highly exaggerated, citing the fact that very few people suffer from celiac disease. But this is a non-sequitur. While it is true that a relatively small percentage of people have celiac disease and generally only those with celiac disease suffer dire consequences from eating gluten, a larger and growing number of people have discovered that they are sensitive to gluten. Gluten sensitivity can manifest in many different ways, including allergies, bloating, and psoriasis, to name a few. So just because someone doesn't suffer catastrophic consequences from eating gluten doesn't mean that they don't suffer any consequences and those people deserve GF alternatives, too!
