I was first introduced to gluten free bread about 6 years ago when my wife discovered that she was gluten sensitive. I found that most GF bread tasted - well, let's say a bit like cardboard. GF desserts are a little better but usually only because they use a ton of sweetener and as a result are often overly sweet. It is rare to find a good bread that is GF, tastes good, and is not overly sweet - and even more rare to find one with those qualities plus good nutritional value. It is difficult to find those qualities together even in non-GF bread.
I have always been very interested in and pretty knowledgeable about nutrition and was confident that I could make a GF bread that not only tasted really good but was really good for you. I took that as a creative challenge and after quite a bit of experimentation and refinement, achieved my goal: a dessert bread that is GF, delicious, and very nutritious . My breads are hearty and delicious but what makes them especially unique is that they are also moist and highly nutritious, with lots of fiber and high quality protein.
I believe my breads are coming at a time when many people are discovering that they have some level of sensitivity to gluten and are seeking alternatives to standard GF fare.
